Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 tbsp tomato sauce
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1/3 cup chicken broth
  • 1 tsp garlic-chili paste
  • 8 oz skinless, boneless chicken breasts, cubed
  • 1 cup broccoli florets
  • 1/2 cup cashew nuts
  • 1 red chilli pepper, sliced
  • 2 tbsp chopped green onion
  • 2 cups jasmine rice

Instructions:

  • Cook the rice in a pot of water according to the instructions on the packaging.
  • Meanwhile heat the oil in a skillet over medium heat, and cook the onion and bell pepper until tender.
  • Mix in the ketchup, oyster sauce, soy sauce, chicken broth and chili paste.
  • Place the chicken and broccoli in the skillet. Continue to cook and stir 10 minutes.
  • Mix in the cashews just before serving. Garnish with chilli pepper and green onions.
