Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 3 tbsp tomato sauce
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1/3 cup chicken broth
- 1 tsp garlic-chili paste
- 8 oz skinless, boneless chicken breasts, cubed
- 1 cup broccoli florets
- 1/2 cup cashew nuts
- 1 red chilli pepper, sliced
- 2 tbsp chopped green onion
- 2 cups jasmine rice
Instructions:
- Cook the rice in a pot of water according to the instructions on the packaging.
- Meanwhile heat the oil in a skillet over medium heat, and cook the onion and bell pepper until tender.
- Mix in the ketchup, oyster sauce, soy sauce, chicken broth and chili paste.
- Place the chicken and broccoli in the skillet. Continue to cook and stir 10 minutes.
- Mix in the cashews just before serving. Garnish with chilli pepper and green onions.
